Turkey Chillie

Hi Guys...... Hope you all had a wonderful weekend and all the celebrations treated you well and you had plenty of all of the fantastic offerings on such a special day / weekend. The only thing about all such celebrations is...... what to do with all the leftover food...... not to have the same thing again but have something delicious with the leftover food..... well I thought I'll just give you another recipe to try in the future when you have to use up some of the thanksgiving leftover turkey.

Tantalizing Turkey Chili
2 cloves minced garlic
1 T. Olive Oil
Cooked turkey
1/4 cup water
28 ounces crushed tomatoes
2-3 (depending on how much heat you desire) chipotle peppers in adobo sauce, chopped
2 t. cumin
2 t. cinnamon
1/2 T. chili powder
1 t. salt
1 15-ounce can kidney beans, rinsed and drained
1 cup vegetable broth, low sodium
2 fresh limes

Heat oil in a medium sauce pan over medium heat. Add garlic and saute' 2-3 minutes. Add cooked turkey. Add the crushed tomatoes, peppers, cumin, cinnamon, chili powder, salt and broth to the pot. Stir well. Turn heat to low and simmer for 15 - 20 minutes. Squeeze the juice from two fresh limes and stir in, just before serving. Scoop into 4 soup bowls. Optional toppings: 1 T. fat free Greek yogurt and 1 T. low fat cheddar cheese. Makes 4 servings.

Approximately 332 calories per serving.

    I want to start off by saying THANK YOU for his recipe. I'm not the best cook in the world,but I made this for dinner yesterday and my wife loves it. LOL.... She took it to work and had her co-worker taste it. They are not requested it for there pot luck next week. Keep the recipes coming.. Thank You again...

  2. Can you please add another great recipe. I just finished dinner and my family is loving the Turkey Chili. This is the first time we made chili without using ground-beef. THANK YOU
