Marry Christmas.

The Battle
Hi all you good people out there.......... How are you all doing..... rushing around to get all those Christmas shopping done, trying to get some of the produce for that all important Christmas dinner, and trying to remember who you forgot to get a gift for...... and so I can go on for a long time but.....
My question today is...... Why is it that sometimes we feel like this poor old lady in the picture.... right.... it is only a picture but I think it is sooooo..... relative for these days, when all the goodies on the table look so inviting and you're trying to do the right thing to stay on this healthy journey.
Well.... for me.... with some good days with no temptations .... and you're feeling on top of this journey and you think you have everything down pat ....... the next day you're invited to have coffee with a friend at the nicest of coffee shops and all this wonderful pastries and cakes ask ..... ''please choose me''...... and this ''fight'' starts...... do I need to say more????

Pure Indulgence
So how are all you guys out there.....
Suppose some of you are really, really cold in the midst of winter and some of you........ like me are really really hot....and in the midst of a scorching summer. Anyway I hope that where ever you are in your country you are save, healthy, relaxed and happy.
All the Christmas shopping done by now?? Well if not and you only starting off now.... have a look on the site and see what interesting new stuff there is...for you that will make your new year and the healthy living lifestyle decision you made a happy one.
Seeing that it is Christmas we all want to indulge just that little bit more but we are so unhappy about all the calories that come with a ''indulgence'' decision........ Well don't fear I think I have something that will make that indulgence just a little easier on the hips.......Preparation time only a mere 10 minutes and 1 -2 hours chilling time..... that's it.
Ingredients

Ingredients
400 ml can coconut cream
1/2 cup cacao powder
1/4 cup rice malt syrup
1/4 cup chia seeds
2 teaspoons gelatin sponged on 30 ml of water ..Once sponged heat for 30 sec in micro wave till melted.
Place all ingredients except cacao bits in a large mixing bowl and wish together until well combined. Pour into serving glasses, Sprinkle with cacao bits and chill in fridge till firm. 1-2 hours.
So now you have it.... try it and let us know what you guys think. I just love chocolate mousse and If it can have lesser calories .... well the decision to make is just soooo much easier.......

Hi Guys .... Here where we live in the tropics of Australia it is really really hot and mucky at at this stage, air conditioners running the whole day and not really feel like cooking ....
What to do for dinner is the question........ Being on diet ...... or as I prefer to call it.... healthy living lifestyle.....It does not help the situation at all. Not that cooking is the problem but the WHAT is the problem....
I am sure we all have been down that track at some stage in our lives...... more often than we want to admit. What was your solution to such a problem? Tell us so when we get in such a predicament we will be able to help our self's, and get new and exiting ideas and recipes for meals and snacks.
With all the tropical fruit in season right now maybe its time for a lovely dessert ....no cooking to get your house hot and no cooking to take up the most of the day ... afternoon or evening So I came across this awesome idea. I love strawberries because it is just so versatile in desserts. This is something different all together. Chocolate dipped strawberries is always a hit with the hole family but the calories are not ......... mmmmm..... (sigh,sigh) So... looking for something fun and healthy I think this is it. Fun in winter and summer, a all year rounder less calories and just as nice .... if not nicer.... Try this and let me know what you guys think
So what is this you may ask...... Fresh strawberry dipped in Fluffy and then grilled over a flame, camp fire, or even a candle...... Very romantic..... Until crispy and fluffy.... It does fluff up.
If you're going to use wooden skewers just make sure you soak it in water for about a half an hour before using. Otherwise steel skewers work just as well....
So something new... have a go... try it and let me know that you think.

Hi guys how are you all...... I hope you're all having a great time and you're are traveling well on your healthy living lifestyle journey.
I was wondering if breakfast is also a boring kind of meal to prepare as it is for me.... Don't get me wrong I enjoy having a nice brunch on a Saturday morning with hubby... but we get so board with just doing the same old same old bacon, fried ... or scrambled, eggs and toast....so I went to see if there is any other kind of interesting things to do with eggs that does not cost the world and is quick, easy, tasty and healthy. Well that might by a big ask to try to get all that in one recipe I thought..... but I think I did find THE one. Who would have ever thought that carrots can be such a treat with breakfast. So Goran this is a great recipe for you that was asking for a Omega -3 recipe. Hope you try and enjoy this one.

extra virgin olive oil
1 bunch spring onions, sliced 4 tomatoes, diced 2/3 cup carrots, grated 8 eggs enriched with omega-3 fatty acids 2 tbsp nonfat natural yogurt 1/2 tsp dried marjoram |
Directions

Beat
eggs and combine with rest of ingredients, except olive oil, in a large bowl.

non-stick frying pan, heat olive oil. Pour in egg mixture. Cook until just

I Am so happy that you are enjoying all the recipes. I was ask for a cake recipe...... well I hope this one will be a hit with the family as well..... and your wife Brain. Trying to stay in the spirit of the so called 'silly season'..... with the homely and warmly smell and taste of ginger. With less than 250 calories per serving.... well again..... you can have your cake AND eat it.

1/3 cup granulated sugar
1/4 cup butter, softened
1/4 cup molasses
1 large egg
1 1/2 cups all-purpose flour (about 6 3/4 ounces)
2 teaspoons ground ginger
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon ground cloves
2/3 cup fat-free milk
1 teaspoon vanilla extract
Cooking spray
FROSTING:
1/4 cup (2 ounces) fat-free cream cheese, softened
1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
1 3/4 cups powdered sugar
Preheat oven to 350°.
To prepare cake, place 1/3 cup granulated sugar and butter in a medium bowl; beat with a mixer at high speed for 2 minutes or until well combined. Add molasses and egg; beat well.
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (through cloves) in a medium bowl. Add flour mixture and milk alternately to sugar mixture, beginning and ending with flour mixture. Stir in 1 teaspoon vanilla. Spoon batter into an 8-inch square pan coated with cooking spray. Bake at 350° for 30 minutes or until a wooden pick inserted in the center comes out clean. Cool completely on a wire rack.
To prepare frosting, place cheeses, 1 teaspoon vanilla, and 1/8 teaspoon salt in a large bowl; beat with a mixer at medium speed until light and fluffy. Gradually add powdered sugar; beat at low speed just until blended (do not overbeat). Spread frosting evenly over top of cake. If you wish spoon a dessert spoon of lemon curd when serving.

Fish oil.... pills or produce
So what do you guys think about fish oil ....... There is a lot of benefits in fish oil as we all know, but my question is..... after I saw how much pills we have to drink on a ad on television today.... to make it almost worth our while ... I think a well cooked piece of salmon will for sure be my priority .... all that said I love salmon, so don't mind to have it often, specially a well cooked piece with a balsamic glaze... yummy ..... Turkey Chillie
Hi Guys...... Hope you all had a wonderful weekend and all the celebrations treated you well and you had plenty of all of the fantastic offerings on such a special day / weekend. The only thing about all such celebrations is...... what to do with all the leftover food...... not to have the same thing again but have something delicious with the leftover food..... well I thought I'll just give you another recipe to try in the future when you have to use up some of the thanksgiving leftover turkey.
Tantalizing Turkey Chili
2 cloves minced garlic
1 T. Olive Oil
Cooked turkey
1/4 cup water
28 ounces crushed tomatoes
2-3 (depending on how much heat you desire) chipotle peppers in adobo sauce, chopped
2 t. cumin
2 t. cinnamon
1/2 T. chili powder
1 t. salt
1 15-ounce can kidney beans, rinsed and drained
1 cup vegetable broth, low sodium
2 fresh limes
Heat oil in a medium sauce pan over medium heat. Add garlic and saute' 2-3 minutes. Add cooked turkey. Add the crushed tomatoes, peppers, cumin, cinnamon, chili powder, salt and broth to the pot. Stir well. Turn heat to low and simmer for 15 - 20 minutes. Squeeze the juice from two fresh limes and stir in, just before serving. Scoop into 4 soup bowls. Optional toppings: 1 T. fat free Greek yogurt and 1 T. low fat cheddar cheese. Makes 4 servings.
Approximately 332 calories per serving.

Wonderful Thanksgiving
Just want to say .... hope all the guests in the USA had a wonderful thanksgiving and a great time with friends and family. Here in Oz it is Saturday afternoon already and very hot. You guys in the Northern part of the world should by now really feel the cold.... all the best.... Well today I just want to make this statement that I saw on the net and it got me thinking...... Yummy Desserts
So this morning I thought we have to start this blog with a very easy yummy dessert .... only 3 ingredient recipe ..... so easy even the kids will be able to do and help, and yet so delicious and guilt free.
1 box spice cake, unprepared
1 can (15 oz.) pure pumpkin
1 bag (12 oz.) semi-sweet chocolate chips
Instructions
Preheat oven to 375 degrees
Mix together dry spice cake mix and pumpkin until completely blended.
Fold in chocolate chips.
Drop onto sprayed cookie sheet
Bake for 8-9 minutes
So guys... have your cake.... and chocolate eat it.
